Start with the change you need in the product
Air can enter during collection, transfer and buffering. A deaeration system combines a product vessel, vacuum circuit, condenser and controlled discharge to promote gas release. Reducing avoidable air entry remains useful even when a deaerator is included in the line.
Evaporation has an intentional water-removal duty that changes the product concentration. Its heater, vapor separation, condenser and product movement are sized around that duty. The shared use of vacuum does not make the two machines interchangeable.

Treat aroma handling as an explicit part of the route
Volatile flavour components respond to pressure and temperature as well as air contact. Condensate and any recovered aroma fraction therefore need a defined destination. Neither gas removal nor lower-temperature boiling establishes that all aroma remains in the product.
Compare representative material before and after the relevant operations. Include transfer conditions, holding and heating so the comparison can distinguish the effect of fruit variation from the processing history. A vacuum gauge reading alone is not a product-aroma measurement.
Give the equipment supplier the right duty
For deaeration, describe the prepared-liquid rate, inlet temperature, foaming or gas issue and the next stage. For evaporation, provide inlet and outlet solids on a stated basis, feed flow, viscosity and the target water removal. Product composition helps establish both selections.
List the heating and cooling supplies, cleaning interfaces and operating range. Discuss whether both operations are needed for the selected product instead of assuming vacuum processing is a single stage. The final line layout should show the distinct product and utility connections.
