Incoming material and preparation
Will pink- and white-fleshed guavas be processed separately, and which colour and aroma define each finished ingredient?
What level of graininess and seed fragments will the customer accept, and can trials separate these defects without unnecessarily stripping the body from the purée?
Define incoming state, variety, maturity, accepted defects and supply interruptions in the purchasing brief. A proposed line should be demonstrated with representative commercial lots rather than a single ideal sample.
Product routes
- purée
- nectar base
- jam
Inspect the fruit lots
Record accepted guava type, maturity and condition.
A variety or colour change should remain traceable instead of being concealed in a mixed test batch.
- Equipment duty: Receiving conveyor and inspection table
Wash and rinse
Clean the fruit before size reduction.
Remove unsuitable fruit and foreign material before they enter the pulper feed.
- Equipment duty: Fruit washer and controlled elevator
Prepare a controlled feed
Open the fruit for flesh and seed separation.
Assess feed consistency without unnecessarily breaking hard seeds into fine fragments.
- Equipment duty: Chopper or pulper feed system
Separate seeds and coarse material
Recover the edible flesh fraction.
Compare seed rejection, fragments and retained flesh against a declared product sample.
- Equipment duty: Guava pulper-refiner
Develop final texture
Meet the required mouthfeel and particle character.
Any conditioning or additional separation is a product-development choice, not an assumed requirement for every guava product.
- Equipment duty: Selected finishing or separation stage
Transfer the finished purée
Supply the specified nectar-base or purée route.
Optional clarification or concentration requires a different downstream brief from ordinary flesh refining.
- Equipment duty: Covered product vessel and appropriate pump
Specify preservation around the actual product
Confirm the measured product composition, particulate load and intended storage chain before the treatment and filling arrangement is selected.
The seed-separated purée route needs its own validated process. A drawing, a heat-exchanger name or a successful extraction trial does not establish a safe treatment schedule or a finished shelf-life claim.
- Equipment duty: Selected treatment unit, controlled transfer and process instruments
Fill, identify and verify the packed ingredient
Match the approved ingredient to the selected package and handling conditions. Record the production lot and the conditions required by its defined distribution route.
The filling boundary belongs in the project specification: container format, product-contact interface, filling hygiene, storage and the downstream user’s receiving requirements must agree before commercial acceptance.
- Equipment duty: Compatible filler, packaging interface and lot-identification station
Product and residue streams
Keep seed-rich rejects and coarse skins separate from the main purée. Any secondary recovery needs its own hard-particle and quality assessment.
Quality checks along the process
Evaluate hard-seed fragments, mouthfeel, colour and consistency. Keep guava type and maturity with the samples used for downstream trials.
Define the sampling location, sample preparation, measurement method and acceptable variation. Retain traceable comparisons through the intended downstream route; a favourable immediate sample is not proof of storage stability.
Equipment modules and selection
| Equipment module | Process role | Selection basis |
|---|---|---|
| Receiving conveyor and inspection table | Control the incoming-material presentation before preparation. | Check actual lot condition, peak arrivals and the accepted size range. Provide a sample/reject point that can be operated without obstructing feed to the next machine. |
| Chopper or pulper feed system | Peel, seed and fibre separation. | Preparation should be evaluated using the actual variety and ripeness range. A visually smooth sample does not by itself demonstrate controlled coarse particles, acceptable fibre or stable transfer. |
| Guava pulper-refiner | Create the agreed intermediate condition for downstream equipment. | Agree an acceptance sample, a measurable particle or separation target and a reject-handling method. Select contact parts and access arrangements after trials with representative material. |
| Product buffer and transfer system | Connect preparation, treatment and filling without assuming all sections run at the same rate. | Record viscosity, particle character, temperature envelope and expected stoppages. Confirm drainability, sampling points and how unaccepted or interrupted product is identified and handled. |
| Preservation, packaging and cleaning interfaces | Complete the declared process boundary. | The quoted scope should identify included instruments, services, containers, hygienic connections and validation responsibilities. An item list without these interfaces is not a complete line specification. |
Cleaning circuits and physical access
Hard seeds and adhering pulp require accessible screens, collection points and seals. Cleaning effectiveness should be checked with the actual seed-and-pulp soil.
Assign cleaning responsibilities to the open preparation zone and the closed product circuit separately. Confirm which parts require removal or inspection and how cleaning effectiveness will be demonstrated with the actual product soil.
Packaging and storage interfaces
Specify whether the seed-separated purée is supplied as a chilled, frozen, otherwise treated or aseptically handled ingredient, as applicable to the developed product. Package material, closure, fill conditions and distribution are a connected system. Any claimed ambient stability or shelf life requires product- and package-specific validation; the process introduction does not set treatment temperatures or holding times.
Inputs for the engineering brief
- Use representative seed load and maturity, comparing the refined product and seed-rich rejects together.
- Provide the intended finished-product specification, representative raw-material samples, daily operating pattern and seasonal peak load.
- Identify available utilities, factory layout, drainage, reject collection and the exact inlet/outlet conditions of equipment supplied by others.
- Agree trial acceptance criteria and define the preservation, filling, cleaning and commissioning responsibilities before finalising the equipment scope.
Compare the shell and seed-pulp boundary
A passion fruit process begins by defining shell opening and the seed-bearing pulp fraction. Other materials can need an entirely different peel, stone, press-mash or juice-extraction section before a screened stream reaches a buffer.
Use the passion fruit route as a comparison of equipment roles, with its own seed and texture decisions. The links below explain those existing duties; they do not establish that one opening or finishing arrangement suits every fruit.
Sources and processing scope
The references support these material and processing considerations. The actual equipment, process conditions, preservation method and packaging interface follow the specified raw material and finished product.
In practice
Questions about this stage
Is guava juice the same as guava purée?
No. A purée retains edible flesh, while a separated or clarified liquid has a different product and separation objective. The name should describe the actual ingredient supplied.
Can finer refining solve every texture issue?
No. The appropriate sequence depends on seeds, flesh, the accepted particles and the final application. Evaluate the sample and reject stream rather than relying on the smallest screen opening.
What should a useful guava trial establish?
Use representative seed load and maturity, comparing the refined product and seed-rich rejects together. Record incoming material, accepted feed, finished ingredient and each reject stream separately. Keep settings, samples and analytical methods with the trial record so the result can be compared with subsequent seasonal lots.
