Match washing action to the fruit supply
Brush contact and overhead sprays provide mechanical surface preparation and rinsing. Their operating arrangement should remove the relevant incoming soil without unacceptable peel abrasion or fruit breakage. Include the size range and fragile fruit expected in the seasonal supply.
A representative trial assesses loading, residence and discharge condition together. An empty washer or a selected handful of strong fruit does not describe the production feed. Record water quality and the route by which removed dirt leaves the equipment.
| Decision | Selection basis |
|---|---|
| Incoming fruit | Size, peel firmness, soil and damaged-fruit proportion |
| Washing | Brush contact, spray coverage and bed loading |
| Water | Supply, filtration or replacement and drainage |
| Acceptance | Cleanliness, abrasion, breakage and carryover |
Make inspection possible at the intended loading
Manual sorting depends on the visible fruit surfaces and the available operator positions. Deep loading can hide defects even if the belt transports enough hourly mass. Feed presentation, working width and speed should provide a manageable inspection opportunity.
Define accessible rejection points and a route away from accepted fruit. Inspection criteria belong with the receiving specification; visual sorting cannot replace laboratory quality checks or the plant hygiene plan. Keep rejected fruit and wash-water flows separate from collected juice and pulp.
Design transfers and wet-area access together
The elevator and conveyors change level and feed position. Confirm the next-machine inlet height, permitted drop and ready signal rather than specifying a conveyor by average fruit mass alone. Accumulation at a stopped opening machine can affect the whole front end.
Wet fruit debris must be removable from brush supports, belt returns and hopper corners. Guards, drainage and cleaning access need to fit the actual installation. Show shell-discharge and service paths alongside accepted fruit on the layout so one stage does not obstruct another.

Questions about this stage
Does brush washing replace downstream thermal treatment?
No. Washing prepares the fruit surface and has its own hygiene requirements. The downstream treatment is selected and validated for the packed product.
