Tomato processing line

Tomato Processing Line

Tomato paste is a concentration project built around a specified refined feed. Receiving, break or conditioning strategy, skin-and-seed separation and the target paste consistency should be assessed as one product-development route. Wash and inspect tomatoes, crush and apply the product-specific break treatment, then separate skin and seeds by refining. Juice, purée and concentrated paste diverge in retained solids and concentration. Ketchup or sauce adds formulation and mixing; it should not be presented as the same unformulated tomato stream.

Incoming material and preparation

Is the buyer targeting a fluid juice, a spoonable sauce base or concentrated paste, and which viscosity and solids specification defines success?

How will trials choose the break treatment for the required texture, and what residual skin, seed material and colour variation can the downstream customer accept?

Define incoming state, variety, maturity, accepted defects and supply interruptions in the purchasing brief. A proposed line should be demonstrated with representative commercial lots rather than a single ideal sample.

Product routes

  • paste
  • purée
  • juice
  • ketchup or sauce base

Receive and inspect tomatoes

Identify accepted variety, maturity and damaged fruit.

Keep rejected fruit and foreign material out of the combined tomato feed.

  • Equipment duty: Receiving conveyor and inspection station

Wash and rinse

Remove surface debris before crushing.

Arrange a defined dirty-to-clean boundary and inspect accepted fruit before its identity is lost in the mash.

  • Equipment duty: Tomato washer and clean transfer

Crush and define conditioning

Prepare the feed for the chosen product texture.

Hot-break and cold-break terminology does not supply a universal temperature or a final preservation validation.

  • Equipment duty: Crusher and developed break/conditioning interface

Separate skins and seeds

Develop the accepted refined tomato feed.

Agree coarse particles, seed fragments and consistency before selecting the finishing sequence.

  • Equipment duty: Tomato pulper and staged refiner

Concentrate the refined product

Remove water to the specified paste endpoint.

Evaluate the actual refined feed, measured concentration basis and transfer behaviour rather than assuming incoming tomato weight determines paste output.

  • Equipment duty: Product-compatible evaporator

Prepare concentrated-product handling

Connect the developed paste to final treatment and the selected filler.

Ketchup and sauces add a separate formulation; paste concentration alone does not define those finished products.

  • Equipment duty: Covered paste vessel and suitable pump

Specify preservation around the actual product

Confirm the measured product composition, particulate load and intended storage chain before the treatment and filling arrangement is selected.

The refined and concentrated paste route needs its own validated process. A drawing, a heat-exchanger name or a successful extraction trial does not establish a safe treatment schedule or a finished shelf-life claim.

  • Equipment duty: Selected treatment unit, controlled transfer and process instruments

Fill, identify and verify the packed ingredient

Match the approved ingredient to the selected package and handling conditions. Record the production lot and the conditions required by its defined distribution route.

The filling boundary belongs in the project specification: container format, product-contact interface, filling hygiene, storage and the downstream user’s receiving requirements must agree before commercial acceptance.

  • Equipment duty: Compatible filler, packaging interface and lot-identification station

Product and residue streams

Collect skins, seeds and coarse rejects separately. Record feed solids, removed water and actual paste output on a clear mass-balance basis.

Quality checks along the process

Assess skin and seed particles, colour, flavour, measured solids and consistency. Compare preparation and concentration routes using the same sample basis.

Define the sampling location, sample preparation, measurement method and acceptable variation. Retain traceable comparisons through the intended downstream route; a favourable immediate sample is not proof of storage stability.

Equipment modules and selection

Equipment moduleProcess roleSelection basis
Receiving conveyor and inspection stationControl the incoming-material presentation before preparation.Check actual lot condition, peak arrivals and the accepted size range. Provide a sample/reject point that can be operated without obstructing feed to the next machine.
Crusher and developed break/conditioning interfaceSoil removal and texture development.Preparation, particle size and any conditioning step should be evaluated for the actual vegetable and product. Do not borrow a fruit-juice preservation schedule for a vegetable formulation.
Tomato pulper and staged refinerCreate the agreed intermediate condition for downstream equipment.Agree an acceptance sample, a measurable particle or separation target and a reject-handling method. Select contact parts and access arrangements after trials with representative material.
Product buffer and transfer systemConnect preparation, treatment and filling without assuming all sections run at the same rate.Record viscosity, particle character, temperature envelope and expected stoppages. Confirm drainability, sampling points and how unaccepted or interrupted product is identified and handled.
Preservation, packaging and cleaning interfacesComplete the declared process boundary. The quoted scope should identify included instruments, services, containers, hygienic connections and validation responsibilities. An item list without these interfaces is not a complete line specification.

Cleaning circuits and physical access

Tomato solids and concentrated deposits require access and cleaning verification at refiners, evaporator contacts and paste-transfer points. Treat open receiving and the closed paste circuit separately.

Assign cleaning responsibilities to the open preparation zone and the closed product circuit separately. Confirm which parts require removal or inspection and how cleaning effectiveness will be demonstrated with the actual product soil.

Packaging and storage interfaces

Specify whether the refined and concentrated paste is supplied as a chilled, frozen, otherwise treated or aseptically handled ingredient, as applicable to the developed product. Package material, closure, fill conditions and distribution are a connected system. Any claimed ambient stability or shelf life requires product- and package-specific validation; the process introduction does not set treatment temperatures or holding times.

Inputs for the engineering brief

  • Trial the declared tomato supply, refining target and paste endpoint, recording reject and evaporation balances without assuming a guaranteed fresh-to-paste ratio.
  • Provide the intended finished-product specification, representative raw-material samples, daily operating pattern and seasonal peak load.
  • Identify available utilities, factory layout, drainage, reject collection and the exact inlet/outlet conditions of equipment supplied by others.
  • Agree trial acceptance criteria and define the preservation, filling, cleaning and commissioning responsibilities before finalising the equipment scope.

Compare the shell and seed-pulp boundary

A passion fruit process begins by defining shell opening and the seed-bearing pulp fraction. Other materials can need an entirely different peel, stone, press-mash or juice-extraction section before a screened stream reaches a buffer.

Use the passion fruit route as a comparison of equipment roles, with its own seed and texture decisions. The links below explain those existing duties; they do not establish that one opening or finishing arrangement suits every fruit.

Sources and processing scope

The references support these material and processing considerations. The actual equipment, process conditions, preservation method and packaging interface follow the specified raw material and finished product.

In practice

Questions about this stage

Is tomato paste the same as ketchup?

No. Paste concentrates a refined tomato feed; ketchup and sauces involve a developed recipe and their own final-process specification. The equipment scope should distinguish those products.

Can hot-break or cold-break labels replace a detailed brief?

No. Specify the desired product texture and develop the actual conditioning and refining sequence. A label alone does not establish settings, preservation or finished shelf life.

What should a useful tomato trial establish?

Trial the declared tomato supply, refining target and paste endpoint, recording reject and evaporation balances without assuming a guaranteed fresh-to-paste ratio. Record incoming material, accepted feed, finished ingredient and each reject stream separately. Keep settings, samples and analytical methods with the trial record so the result can be compared with subsequent seasonal lots.
