Incoming material and preparation
Will the input be fresh capped berries, prepared frozen berries or both, and which cap-removal tasks must the plant perform?
Is the target a visibly seeded purée, a smoother beverage base or a preserve with fruit pieces, and what damage during washing is acceptable?
Define incoming state, variety, maturity, accepted defects and supply interruptions in the purchasing brief. A proposed line should be demonstrated with representative commercial lots rather than a single ideal sample.
Product routes
- purée
- jam
- juice base
Inspect each accepted lot
Remove unsuitable strawberries and record supply condition.
A mouldy or leaking receiving fraction is not made acceptable by pulping it into a uniform colour.
- Equipment duty: Gentle inspection conveyor and shallow receiving
Wash and drain
Remove surface debris without unnecessary damage.
Assess the softest accepted fruit and the amount of edible material lost during washing.
- Equipment duty: Gentle berry washer and drain conveyor
Manage caps and leaves
Separate unwanted green material before or during the defined pulping sequence.
Confirm which operation removes the caps and how that rejected fraction is collected.
- Equipment duty: Capping arrangement or pulper preparation as specified
Develop the purée
Recover the edible flesh at the declared seed character.
A visibly seeded preparation and a smoother purée are different product targets.
- Equipment duty: Controlled pulper
Finish the texture
Remove unacceptable coarse material and set the required consistency.
Compare seed carryover, mouthfeel and recovery together instead of selecting a fine screen by default.
- Equipment duty: Appropriate finishing screen
Connect product handling
Supply the chosen plain purée or formulated fruit-base route.
Bulk freezing, thermal treatment and recipe-based preparation each require their own downstream specification.
- Equipment duty: Covered purée tank and suitable pump
Specify preservation around the actual product
Confirm the measured product composition, particulate load and intended storage chain before the treatment and filling arrangement is selected.
The purée or fruit preparation route needs its own validated process. A drawing, a heat-exchanger name or a successful extraction trial does not establish a safe treatment schedule or a finished shelf-life claim.
- Equipment duty: Selected treatment unit, controlled transfer and process instruments
Fill, identify and verify the packed ingredient
Match the approved ingredient to the selected package and handling conditions. Record the production lot and the conditions required by its defined distribution route.
The filling boundary belongs in the project specification: container format, product-contact interface, filling hygiene, storage and the downstream user’s receiving requirements must agree before commercial acceptance.
- Equipment duty: Compatible filler, packaging interface and lot-identification station
Product and residue streams
Collect caps, leaves and seed-rich rejects separately. Keep edible losses in the washing and finishing balance rather than hiding them in a single recovery figure.
Quality checks along the process
Review cap fragments, seed character, colour and consistency across accepted fruit condition. Evaluate samples through the intended product-handling route.
Define the sampling location, sample preparation, measurement method and acceptable variation. Retain traceable comparisons through the intended downstream route; a favourable immediate sample is not proof of storage stability.
Equipment modules and selection
| Equipment module | Process role | Selection basis |
|---|---|---|
| Gentle inspection conveyor and shallow receiving | Control the incoming-material presentation before preparation. | Check actual lot condition, peak arrivals and the accepted size range. Provide a sample/reject point that can be operated without obstructing feed to the next machine. |
| Capping arrangement or pulper preparation as specified | Gentle handling and seed management. | Inspection, handling damage and separation of small seeds deserve separate acceptance criteria. Juice, seed-containing fruit bases and smooth purées should not be judged against the same texture target. |
| Controlled pulper | Create the agreed intermediate condition for downstream equipment. | Agree an acceptance sample, a measurable particle or separation target and a reject-handling method. Select contact parts and access arrangements after trials with representative material. |
| Product buffer and transfer system | Connect preparation, treatment and filling without assuming all sections run at the same rate. | Record viscosity, particle character, temperature envelope and expected stoppages. Confirm drainability, sampling points and how unaccepted or interrupted product is identified and handled. |
| Preservation, packaging and cleaning interfaces | Complete the declared process boundary. | The quoted scope should identify included instruments, services, containers, hygienic connections and validation responsibilities. An item list without these interfaces is not a complete line specification. |
Cleaning circuits and physical access
Caps and small seeds can remain around screens and contact joints. Provide inspection access and a changeover plan for pigmented residues.
Assign cleaning responsibilities to the open preparation zone and the closed product circuit separately. Confirm which parts require removal or inspection and how cleaning effectiveness will be demonstrated with the actual product soil.
Packaging and storage interfaces
Specify whether the purée or fruit preparation is supplied as a chilled, frozen, otherwise treated or aseptically handled ingredient, as applicable to the developed product. Package material, closure, fill conditions and distribution are a connected system. Any claimed ambient stability or shelf life requires product- and package-specific validation; the process introduction does not set treatment temperatures or holding times.
Inputs for the engineering brief
- Trial representative soft and firmer accepted lots with the declared cap-removal and seed-retention specification.
- Provide the intended finished-product specification, representative raw-material samples, daily operating pattern and seasonal peak load.
- Identify available utilities, factory layout, drainage, reject collection and the exact inlet/outlet conditions of equipment supplied by others.
- Agree trial acceptance criteria and define the preservation, filling, cleaning and commissioning responsibilities before finalising the equipment scope.
Compare the shell and seed-pulp boundary
A passion fruit process begins by defining shell opening and the seed-bearing pulp fraction. Other materials can need an entirely different peel, stone, press-mash or juice-extraction section before a screened stream reaches a buffer.
Use the passion fruit route as a comparison of equipment roles, with its own seed and texture decisions. The links below explain those existing duties; they do not establish that one opening or finishing arrangement suits every fruit.
Sources and processing scope
The references support these material and processing considerations. The actual equipment, process conditions, preservation method and packaging interface follow the specified raw material and finished product.
In practice
Questions about this stage
Are strawberry caps removed before pulping?
The project must specify the chosen preparation sequence and demonstrate its result. The important point is reliable removal of unwanted green material with a clear reject stream, not an assumed universal arrangement.
Is frozen bulk purée automatically stable because it is packed?
No. The product and container size, freezing or other preservation route, storage and distribution require their own evaluation. A filler alone does not establish preservation performance.
What should a useful strawberry trial establish?
Trial representative soft and firmer accepted lots with the declared cap-removal and seed-retention specification. Record incoming material, accepted feed, finished ingredient and each reject stream separately. Keep settings, samples and analytical methods with the trial record so the result can be compared with subsequent seasonal lots.
