Mango processing line

Mango Processing Line

Mango flesh recovery is linked to stone size, peel separation, ripeness and fibre character. The useful specification defines the accepted flesh and the desired purée, rather than treating every kilogram leaving a destoner as finished product. Sort for processing maturity, wash and separate peel and stone from the edible flesh. Refine the recovered pulp to remove coarse fibres and unwanted peel fragments. Assess the resulting viscosity before selecting transfer and concentration equipment; ripe purée and formulated nectar are different product specifications.

Incoming material and preparation

What stone size, flesh attachment and fibre level occur in the intended mango varieties, including early and late harvest lots?

How smooth must the purée be, what speck level is acceptable, and is concentration required or would single-strength bulk purée suit the buyer?

Define incoming state, variety, maturity, accepted defects and supply interruptions in the purchasing brief. A proposed line should be demonstrated with representative commercial lots rather than a single ideal sample.

Product routes

  • single-strength purée
  • purée concentrate
  • nectar base

Receive and grade

Identify variety, maturity and accepted fruit dimensions.

Include the stone and fibre behaviour of the purchased varieties in the trial plan.

  • Equipment duty: Inspection conveyor and fruit grader

Wash and inspect

Clean the fruit before the flesh-separation section.

Keep rejected fruit and dirty wash water outside the prepared-flesh circuit.

  • Equipment duty: Washer, rinse elevator and brushing where justified

Separate peel and stone

Recover edible flesh while excluding coarse skin and the hard stone.

Inspect skin specks, fragments and flesh retained with the stone stream separately.

  • Equipment duty: Mango-compatible destoner and peeling arrangement

Refine the flesh

Develop the desired fibre and particle character.

Assess the product against its intended nectar, purée or fruit-base use rather than a single visual smoothness standard.

  • Equipment duty: Pulper-refiner

Review optional conditioning

Evaluate any proposed change in preparation or intermediate handling.

A preheating or further-separation step needs its own purpose and product trial, not a universal setting borrowed from another fruit.

  • Equipment duty: Defined conditioning interface and sample points

Route natural or concentrated product

Supply the chosen single-strength or concentrated-purée route.

Evaporation, deaeration and aroma handling are separately specified options with their own inlet requirements.

  • Equipment duty: Covered tank and suitable transfer pump

Specify preservation around the actual product

Confirm the measured product composition, particulate load and intended storage chain before the treatment and filling arrangement is selected.

The peeled and destoned purée route needs its own validated process. A drawing, a heat-exchanger name or a successful extraction trial does not establish a safe treatment schedule or a finished shelf-life claim.

  • Equipment duty: Selected treatment unit, controlled transfer and process instruments

Fill, identify and verify the packed ingredient

Match the approved ingredient to the selected package and handling conditions. Record the production lot and the conditions required by its defined distribution route.

The filling boundary belongs in the project specification: container format, product-contact interface, filling hygiene, storage and the downstream user’s receiving requirements must agree before commercial acceptance.

  • Equipment duty: Compatible filler, packaging interface and lot-identification station

Product and residue streams

Separate peel, stones and fibrous rejects from the edible purée. Any secondary flesh recovery must retain fragment and skin controls.

Quality checks along the process

Check skin specks, hard fragments, fibre, colour and consistency on identified varieties. Compare samples after the same downstream handling.

Define the sampling location, sample preparation, measurement method and acceptable variation. Retain traceable comparisons through the intended downstream route; a favourable immediate sample is not proof of storage stability.

Equipment modules and selection

Equipment moduleProcess roleSelection basis
Inspection conveyor and fruit graderControl the incoming-material presentation before preparation.Check actual lot condition, peak arrivals and the accepted size range. Provide a sample/reject point that can be operated without obstructing feed to the next machine.
Mango-compatible destoner and peeling arrangementPeel, seed and fibre separation.Preparation should be evaluated using the actual variety and ripeness range. A visually smooth sample does not by itself demonstrate controlled coarse particles, acceptable fibre or stable transfer.
Pulper-refinerCreate the agreed intermediate condition for downstream equipment.Agree an acceptance sample, a measurable particle or separation target and a reject-handling method. Select contact parts and access arrangements after trials with representative material.
Product buffer and transfer systemConnect preparation, treatment and filling without assuming all sections run at the same rate.Record viscosity, particle character, temperature envelope and expected stoppages. Confirm drainability, sampling points and how unaccepted or interrupted product is identified and handled.
Preservation, packaging and cleaning interfacesComplete the declared process boundary. The quoted scope should identify included instruments, services, containers, hygienic connections and validation responsibilities. An item list without these interfaces is not a complete line specification.

Cleaning circuits and physical access

Fibres and flesh can remain around screens, stone discharge and pump contact parts. Include access and a product-specific residue-removal assessment.

Assign cleaning responsibilities to the open preparation zone and the closed product circuit separately. Confirm which parts require removal or inspection and how cleaning effectiveness will be demonstrated with the actual product soil.

Packaging and storage interfaces

Specify whether the peeled and destoned purée is supplied as a chilled, frozen, otherwise treated or aseptically handled ingredient, as applicable to the developed product. Package material, closure, fill conditions and distribution are a connected system. Any claimed ambient stability or shelf life requires product- and package-specific validation; the process introduction does not set treatment temperatures or holding times.

Inputs for the engineering brief

  • Trial accepted mango varieties and maturity extremes, measuring product quality and flesh retained with rejects together.
  • Provide the intended finished-product specification, representative raw-material samples, daily operating pattern and seasonal peak load.
  • Identify available utilities, factory layout, drainage, reject collection and the exact inlet/outlet conditions of equipment supplied by others.
  • Agree trial acceptance criteria and define the preservation, filling, cleaning and commissioning responsibilities before finalising the equipment scope.

Compare the shell and seed-pulp boundary

A passion fruit process begins by defining shell opening and the seed-bearing pulp fraction. Other materials can need an entirely different peel, stone, press-mash or juice-extraction section before a screened stream reaches a buffer.

Use the passion fruit route as a comparison of equipment roles, with its own seed and texture decisions. The links below explain those existing duties; they do not establish that one opening or finishing arrangement suits every fruit.

Sources and processing scope

The references support these material and processing considerations. The actual equipment, process conditions, preservation method and packaging interface follow the specified raw material and finished product.

In practice

Questions about this stage

Is a destoner alone a finished mango purée line?

No. Washing, inspection, refining, transfer and the specified preservation and packaging route remain part of the complete brief. The destoner produces an intermediate edible fraction.

Should concentration be selected before the purée target?

First define the product and its particle and consistency requirements. A concentrated-purée project adds evaporation and different transfer duties, which need evaluation with the actual prepared material.

What should a useful mango trial establish?

Trial accepted mango varieties and maturity extremes, measuring product quality and flesh retained with rejects together. Record incoming material, accepted feed, finished ingredient and each reject stream separately. Keep settings, samples and analytical methods with the trial record so the result can be compared with subsequent seasonal lots.
