Incoming material and preparation
Will input be whole lychee, peeled flesh or another prepared ingredient, and which shell-removal and seed-separation operations belong in the project?
What level of browning, shell-derived flavour and aroma loss can the target product accept, and should the buyer compare a pulpy base with a clarified juice sample?
Define incoming state, variety, maturity, accepted defects and supply interruptions in the purchasing brief. A proposed line should be demonstrated with representative commercial lots rather than a single ideal sample.
Product routes
- juice
- juice concentrate
- nectar base
Inspect the supply
Identify accepted variety, maturity and condition.
Document whether the project receives whole fruit or purchased prepared flesh; those supply boundaries are different.
- Equipment duty: Receiving and inspection conveyor
Clean before opening
Clean the outside before edible flesh is handled.
Keep shell washdown and clean-flesh transfer physically and procedurally distinct.
- Equipment duty: Fruit washer and rinse section
Prepare edible flesh
Separate the desired flesh from shell and the hard seed.
Define the actual preparation work and inspect the flesh before it becomes an opaque mash.
- Equipment duty: Shell-opening, peeling and seed-removal arrangement
Extract the chosen ingredient
Develop the specified flesh base or expressed juice.
Seed exclusion and the desired suspended flesh level should be part of the acceptance sample.
- Equipment duty: Pulper or juice press
Set clarity where required
Meet the declared beverage-base or clear-juice specification.
A clarification or membrane stage needs its own trial and inlet condition rather than being included by default.
- Equipment duty: Finishing and optional clarification equipment
Route the accepted product
Supply the chosen single-strength or concentrate route.
Any formulation or oxidation-control addition changes the product brief and must be recorded separately.
- Equipment duty: Covered buffer and optional concentration interface
Specify preservation around the actual product
Confirm the measured product composition, particulate load and intended storage chain before the treatment and filling arrangement is selected.
The prepared-flesh juice or beverage base route needs its own validated process. A drawing, a heat-exchanger name or a successful extraction trial does not establish a safe treatment schedule or a finished shelf-life claim.
- Equipment duty: Selected treatment unit, controlled transfer and process instruments
Fill, identify and verify the packed ingredient
Match the approved ingredient to the selected package and handling conditions. Record the production lot and the conditions required by its defined distribution route.
The filling boundary belongs in the project specification: container format, product-contact interface, filling hygiene, storage and the downstream user’s receiving requirements must agree before commercial acceptance.
- Equipment duty: Compatible filler, packaging interface and lot-identification station
Product and residue streams
Collect shell, seeds and press or refining rejects separately. Distinguish whole-fruit preparation recovery from the recovery of purchased edible flesh.
Quality checks along the process
Review residual hard material, shell specks, aroma and the desired cloud or clarity. Compare samples with the same handling and exposure history.
Define the sampling location, sample preparation, measurement method and acceptable variation. Retain traceable comparisons through the intended downstream route; a favourable immediate sample is not proof of storage stability.
Equipment modules and selection
| Equipment module | Process role | Selection basis |
|---|---|---|
| Receiving and inspection conveyor | Control the incoming-material presentation before preparation. | Check actual lot condition, peak arrivals and the accepted size range. Provide a sample/reject point that can be operated without obstructing feed to the next machine. |
| Shell-opening, peeling and seed-removal arrangement | Preparation and extraction. | A trial should distinguish the edible fraction entering extraction from whole-fruit weight. The agreed pulp or seed character determines how much separation follows the initial extraction. |
| Pulper or juice press | Create the agreed intermediate condition for downstream equipment. | Agree an acceptance sample, a measurable particle or separation target and a reject-handling method. Select contact parts and access arrangements after trials with representative material. |
| Product buffer and transfer system | Connect preparation, treatment and filling without assuming all sections run at the same rate. | Record viscosity, particle character, temperature envelope and expected stoppages. Confirm drainability, sampling points and how unaccepted or interrupted product is identified and handled. |
| Preservation, packaging and cleaning interfaces | Complete the declared process boundary. | The quoted scope should identify included instruments, services, containers, hygienic connections and validation responsibilities. An item list without these interfaces is not a complete line specification. |
Cleaning circuits and physical access
Shell fragments, seeds and adhering flesh need inspection points in open preparation. Selected clarification equipment has separate cleaning requirements from ordinary tanks and transfer pipes.
Assign cleaning responsibilities to the open preparation zone and the closed product circuit separately. Confirm which parts require removal or inspection and how cleaning effectiveness will be demonstrated with the actual product soil.
Packaging and storage interfaces
Specify whether the prepared-flesh juice or beverage base is supplied as a chilled, frozen, otherwise treated or aseptically handled ingredient, as applicable to the developed product. Package material, closure, fill conditions and distribution are a connected system. Any claimed ambient stability or shelf life requires product- and package-specific validation; the process introduction does not set treatment temperatures or holding times.
Inputs for the engineering brief
- Trial the actual whole-fruit or prepared-flesh supply, then compare the intended cloudy and clear endpoints only where both are genuinely required.
- Provide the intended finished-product specification, representative raw-material samples, daily operating pattern and seasonal peak load.
- Identify available utilities, factory layout, drainage, reject collection and the exact inlet/outlet conditions of equipment supplied by others.
- Agree trial acceptance criteria and define the preservation, filling, cleaning and commissioning responsibilities before finalising the equipment scope.
Compare the shell and seed-pulp boundary
A passion fruit process begins by defining shell opening and the seed-bearing pulp fraction. Other materials can need an entirely different peel, stone, press-mash or juice-extraction section before a screened stream reaches a buffer.
Use the passion fruit route as a comparison of equipment roles, with its own seed and texture decisions. The links below explain those existing duties; they do not establish that one opening or finishing arrangement suits every fruit.
Sources and processing scope
The references support these material and processing considerations. The actual equipment, process conditions, preservation method and packaging interface follow the specified raw material and finished product.
In practice
Questions about this stage
Does a lychee diagram prove automatic peeling and deseeding?
No. The exact preparation arrangement and labour boundary must be described and demonstrated. A whole-line illustration is not evidence that those operations are included or validated.
Is ultrafiltration essential for lychee processing?
Only if the selected product and clarity objective justify it. A flesh-containing beverage base can have a different separation route from a clear-juice concentrate project.
What should a useful lychee trial establish?
Trial the actual whole-fruit or prepared-flesh supply, then compare the intended cloudy and clear endpoints only where both are genuinely required. Record incoming material, accepted feed, finished ingredient and each reject stream separately. Keep settings, samples and analytical methods with the trial record so the result can be compared with subsequent seasonal lots.
